Cheater's Sour Cherry Cheesecake Crostini
If you crave the creamy richness of this sour cherry cheesecake but don’t feel like baking, here is a shortcut recipe. It’s less sweet than cheesecake but still dessert-worthy. Or serve it as a cheese course paired with a glass of sweet wine.
Beat equal parts mild goat cheese and cream cheese together until smooth. Add a pinch of black pepper and a dash or two of confectioners’ sugar, to taste (don’t make it too sweet: the cherries on top will take care of this). Toast baguette or country bread slices under the broiler or on the grill, then brush with olive oil or spread with a little butter. Let cool, then top with the goat cheese mix (if you spread it on the warm bread, it might melt). Top with the sour cherry sauce, or a drizzle of your best jam or honey. Enjoy.
